Spiralized carrot and apple salad



Wash carrot and apple well and then spiralize. Immediately squeeze some lemon juice coating all the strands. Toss together both carrot and apple in a salad bowl and cut strands with a knife to make serving and eating easier. Top with C oursely chopped  fresh herbs of your choice like sweet basil or cilantro. Cover and chill in refrigerator until it’s time to serve. This is so refreshing and light! I love it chilled. It’s also vegan and raw, making it very healthy.

Grilled Stuffed Capsicum


We grilled and then stuffed these hydroponically grown capsicum from Leisure Farms. Here’s the recipe:

Sauté lean ground meat with garlic and onion (we used chicken breast for this). Sprinkle with cumin and chili powder. Turn off heat when done and top with fresh chopped tarragon or any other herb of your choice like oregano, thyme or marjoram. Dried herbs work fine too if you don’t have fresh ones on hand.

Slice tops off capsicum and spoon out the seeds. Grill over hot coals until done. Remove from grill and stuff with meat mixture. Top with mozzarella and broil for 5 minutes or until cheese is melted. Keep an eye on your capsicum as it burns quickly.

Serve immediately!




Finding Filipino through the rebirth of a local luxury brand

I was a junior in college when I discovered Fino Leatherware. Putting together money I saved while working part time in a radio station plus allowance from my parents, I remember going into the store, giddy about which Fino item I would bring home. Balancing body, mind and spirit, an interactive workshop by Lia Bernardo at Mango Tree’s Healthy Kitchen

Funny how this post is, once again, about balance. Recently it seems I have been positively attracting ways to help me with my balancing act as a working mom. Needless to say, I enjoyed this talk immensely.

“Mindful & intuitive eating is about knowing your body and how your body reacts to food,” says Lia Bernardo, integrative healer and personal growth teacher. The talk dubbed as ‘Healthy Kitchen’ by Mango Tree aimed to educate attendees on the importance of eating healthy, teaching them how to marry the concept of mindful eating with the knowledge of superfoods. “It’s about cultivating a relationship with food that’s mindful, keeping in mind that you are what you eat,” adds Lia. Making a conscious effort to incorporate superfoods in your meals everyday will in the long run enhance the natural cellular development of the body, resulting in cells that will make the body thrive, resulting in a radiant glow. Yes, the good news to eating mindfully is, you got it, beautiful skin. That’s an awesome bonus if you ask me. Thai food in particular contains a slew of superfoods and during the Healthy Kitchen by Mango Tree we were shown some of these and how they were incorporated deliciously in the menu. Guests seemed relieved that using such superfoods (kaffir lime and leaves, cilantro, galangal, kangkong, coconut water just to name a few) didn’t mean boring and bland meals–on the contrary, each dish was delicious and full of flavor.

Here are some of the dishes incorporating a whole lot of healthy ingredients which proved that healthy can be yummy:

Tom Yum Soup with prawns, lime, lemongrass, coriander


Phad Pak Bung Fai Daeng – stir-fried morning glory (kangkong) with garlic, fresh chillies and soybean sauce


Yum Ma Khua Phao Song Goong – grilled eggplant salad with shrimp


Kai Jiew Hom – Thai omelette with coriander


Som Tum Thai – Spicy fresh green papaya salad with cherry tomatoes, snake beans, peanuts, and dried shrimp


My absolute favorite dessert – the lightest and creamiest coconut custard with corn


Lia likewise emphasized how intuitive eating leads to wellbeing (versus wellness), thereby resulting in a healthy balance of a thriving body, mind and spirit.
